I'm not sure if there is already a way of doing this but as there are not many players in chat often could there be a way to display everyone who is in chat and what channels they are in providing you have access in that channel, I think everyone is lurking some where no-one is on these days

There is no way to do that, and there won't be one. Imagine what would happen when we DO have tens/hundreds of users logged on.... *shudder*

In the short term, you can always use the "Logged on users" thing from the charpane and just do a /whois on each.
